Executive Chef Xila Caudillo honors her Mexican heritage and Southern California upbringing with a robust menu featuring 100% plant-based versions of Mexican classics alongside her own one-of-a-kind small plates. To the delight of those looking to sip rather than bite, Etérea also proudly boasts a dynamic roster of tequila and mezcal offerings complete with an original cocktail menu devoted to ethically and sustainably grown agave spirits and curated by Mixologist Sother Teague of Amor y Amargo.

We are working with local producers in Upstate New York to bring quality, seasonal ingredients to our restaurant. This is an opportunity to reduce our carbon footprint from imports.

 

A vegan diet uses 300 gallons of water daily, compared to 4,000 gallons for a meat-based diet. We believe that veganism, at its core, is a radical and revolutionary lifestyle choice that directly enhances our environmental, economic, and social well-being. Operationally, we also strive to go “beyond the paper straw,” challenging our team members to set goals for and execute new sustainability best practices.
